Staying away from gluten is difficult for those who suffer from gluten intolerance or wheat sensitivity. Gluten is in everything and most flours traditionally used for baking. Many of the treats and cakes you eat everyday no longer are available when you are wheat intolerant.If you have a sweet tooth like myself and are intolerant to gluten, you need to have a few sweet recipes in reserve which offer you a little treat for all your hard work you put in, avoiding gluten.

Carrot Cake is a delicious sweet cake, whose name is probably its worst enemy when it comes to being accepted by the masses. For those who know how good carrot cake can be , here is a version which is gluten free.

1/2 cup Gluten Free Flower( Combination of Tapioca, Rice, Potato flour)

1/2 cup of Almond meal

1 teaspoon baking powder ( gluten free)

1 teaspoon bi carb soda ( gluten free)

1 teaspoon cinnamon

Pinch salt

Pinch of xanthum gum ( cake thickener-Gluten free)

1/2 cup brown sugar (can use raw if not available)

1/4 cup of Extra light Olive oil

2 eggs

2 cups of grated carrots (aprox 4-6 carrots depending on size)

Optional - 1/3 cup sultanas

Lemon juice

Grate carrots and squeeze over some lemon juice to keep them from going brown. Beat eggs and sugar together then add sifted dry ingredients and everything else and mix! Grease and line a loaf tin pour in mixture and bake for 40-50 mins until golden brown on top at 180c
This cake is foolproof and really delicious!!

If you are not Dairy intolerant you can make up cream cheese frosting to put on Cake as well. But I like it without frosting as well. If I make frosting, I prefer to make a light sweetened cream cheese frosting.

1-8 ounce package cream cheese

1/2 cup butter softened (Can use Dairy free/lactose free substitute)

1/4 -1/2 cup sugar -To taste depending on your sweet tooth.

1 teaspoon vanilla extract

Mix all ingredients in a bowl. Its easier to soften the butter first. There is no exact amount to use for sugar so just experiment and add to taste.Spread the frosting ontop of carrot cake. Have this carrot cake for dessert with frosting and vanilla ice cream, or for breakfast. I have baked it about 20 times and everyone raves about it! Enjoy and rememebr, just because its gluten free doesnt mean it cant taste good.

Note: Gluten is a protein found in wheat, rye, and barley or any product made from derivitives of these grains. Gluten gives bread elasticity, however many flours are available which are gluten free.Buck wheat, Tapioca, Rice , Besan, Quinoa, and Potato flour are Gluten free flours.

Although it's not true that pizza was invented here - it's actually much older - it did become the dish we all known and love here. Pretty much everyone agrees that of all the pizza restaurants in Naples, Da Michele is the best. They only serve two kinds of pizza, marinara and margherita. So once you get waited on, it won't take you long to order. Ever since the book Eat, Pray, Love came out, they've been even more crowded than usual. Da Michele has had plenty of time to perfect their craft - they've been at it since 1870. They're closed on Sundays.

Opened in 1780, Pizzaria Brandi is one of the oldest pizza restaurants in Naples. They invented the Pizza Margherita to honor the first queen of Italy when she visited in 1889. You can dine in the dining room with wood beams and old framed photographs, or sit outside. Unlike many of their competitors, they offer unconventional pizza toppings like seafood, arugula, and bresaola. They're also famous for their deep-fired pizza, known as Toto.

Another pizzeria with unusual toppings is Ciro a Mergellina. The waterfront location guarantees that the fish here is fresh, so if you don't want pizza, have grilled seafood or spaghetti vongole. Their pizza is consistently ranked in the top five in Naples. And you can have a delicious, home-made gelato for dessert.

Opposite Castel dell'Ovo near the waterfront, Da Ettore is a very popular spot for pizza and a lot more. They also specialize in fried treats like potato croquettes, rice balls, mixed seafood plates, and zucchini blossoms. Service is friendly and fun - the waiters really get into it here.

Trianon, which is across the street from Da Michele, gets some of their overflow, so it's usually packed too. Diners who end up here aren't usually disappointed. Finally, a casein intolerance does not mean your child has to be deprived of cakes and baked treats. Are you suffering from lactose intolerance?

When a person is lactose intolerant it means that he or she has an inability to properly digest milk sugar, and this is a problem that is far more common than is generally known. The fact is that many people are completely unaware that they have an intolerance to lactose.

By the age of 20, between 30 and 50 million Americans and over 5% of the UK population are believed to be lactose intolerant. The prevalence rate in Australia is around 6% and 9% in New Zealand. Though most people adversely affected by lactose are of Asian, African, Mediterranean or Native American ancestry, it can affect anyone of any racial background. It is far less common amongst Europeans and those whose dietary tradition contains milk and milk products.

Lactose intolerance is brought about because the person does not produce sufficient quantities of an enzyme called lactase, which is produced in the small intestine and is necessary in order for the body to process and absorb the lactose from milk.

Symptoms usually occur within a couple of hours of consuming milk or milk products and include bloating and abdominal cramps, diarrhea, flatulence and nausea. An intolerance to lactose can be confused with IBS or irritable bowel syndrome, since both these conditions effect the gut and digestive system.

Lactose is found not only in milk and obvious milk products such as cream cheese and ice cream, but it is also often added to biscuits, cookies, chocolate and certain breakfast cereals. For those who are lactose intolerant eating these foods can produce the same symptoms as drinking a glass of milk. Strangely, yoghurt does not appear to have the same affect in some lactose intolerant people.

Unfortunately, there is no proven way to increase the production of the enzyme lactase in the body and the very best way to avoid the unpleasant consequences of lactose is simply by avoiding milk and those products that contain it. Soya milk and rice milk are viable alternatives, and special lactose-free milk is now available in some areas. Although some have suggested that eliminating and then slowly and gradually reintroducing lactose into the diet can treat lactose intolerance, this method has not been proven, and there has been no credible research to back this up published in reputable, peer reviewed medical journals.

If excluding milk from the diet it is essential that calcium be obtained from other sources. Excellent sources of calcium are dark green leafy vegetables such as broccoli, cabbage, pok choy, kale, collard greens, mustard greens, and okra. There is more calcium in less than a cup of collard greens, for example, then there is a full cup of cow's milk. Tofu and orange juice fortified with calcium is also readily available in many stores and supermarkets. Provided a varied diet is consumed then it is easy to obtain more than enough calcium. Supplements containing 1000mg of calcium may also be taken if the diet appears to be deficient.

Preparations are available that contain the enzyme lactase in tablet or capsule form. These can help to effectively reduce the problem if taken just before eating lactose-containing foods..

Once the person is aware of the role that lactose intolerance is playing then they are free to choose to deal with it.

Your doctor can run tests to check if you have any lactose intolerance. Once diagnosed then proper measures can be taken to ensure that you can live your life free of the discomfort and inconvenience of lactose intolerance.

Some days are better than others. Some days are fabulous, and others are ... well, just terrible! Yesterday was one of those days. The usually awful, the kind where you think: "How could have been worse?" And then he does. But I was determined not to let the best of me!

It 'started with me. Yes, I have the tone for the day, and I jumped. I'm in this bad mood, this RF. I have no time to compose myself praying, or breathing or ... I continued to link together allThings that I thought I'd do.

Then Jason, my 3 year old started having a bad day. He really whiny and grim, as sporadic with his sister and his mom does not listen. Did not work out. Nothing worked. And certainly do not handle everything well.

So, after watching Jason, because such a curmudgeon, I said: "This must stop, we will make this a good day!" So we decided to go to our local pool. It 'was a beautiful summer day.Swimming perfect climate. I gathered our things together (not an easy task, as you know for sure), and we went over to go swimming.

By the time we went to reception to check in, it started to rain rain. Out of nowhere! I thought: "Well, you bathe in any case, you have been able to play in the rain!" So, I'm changing them in a bathing suit to swim diapers, coat them with sunscreen in the locker room. We welcome your head out the door to the pool area, when I heard a bigRumbling and blowing whistles all the lifeguards. Thunder, great. Now we can not swim for 30 minutes, and swim free end in an hour. That's it. Let's go home!

I try to explain to my children as we left the car on foot, as well as the beautiful, quiet, empty swimming pool while the sun shines. The only song that I sing the 'no-good-bad-day blues! "And I can not wait to fall to the ground and my own whims.

I had to go through the supermarket on the way home stop(Weeping and wailing in the back seat). In the shop I saw a beam of light from heaven on a field in the toy: a slide! The angels were singing, cheering my kids! Yes! I save the remains of that horrible day! Nobody can stop me now! I .... a slip and slide!

I invited more than a few little friends, and they were happy shouts of joy in my backyard. I sat on my seat, playing with my ice water with lemon slice to look at my children and I felt sohappy.

The purchase of a slide is definitely not the answer to all life's problems, but has some help. Here are some things I've learned how to help, again a bad day into a good, if you have kids.

1) Hugs & Kisses. This will go a long way in every situation. Healing can be spread by bad attitudes (both mother and child) to boo-boos, and make sure that all the love.

2) Step outside and breathe fresh air. When all hell breaks loose in the house, a rapid testVent outside. 4)Do something fun as a family. Read a book on the couch together. Make Rice Krispy it. Color. Build a fort with sheets. The concentration of a fun project off the fire, what (or maybe who) was sick before.
